Not everyone can cook like Carmine Mari, Chef De Cuisine at QT Melbourne’s Pascale Bar & Grill, but we can certainly eat like him! We took five minutes with the Italian-born chef to discover his favourite spots on where to eat in Melbourne.
Hey Carmine! What is your favourite spot for a quick takeaway?
Nicos on Healeys Lane, in the CBD. Their Chicken Cotelletta sandwich reminds me of quick Italian lunches from back home.Where do you go for a drink and snacks?
Patsy’s is my go-to when I’m in the mood to open a bottle and relax. A beautiful little vegetarian wine bar just near Queen Victoria Market, the atmosphere is relaxed yet sophisticated, perfect for unwinding after a long day. What is your go-to place for dessert?
While I don’t have much of a sweet tooth, I do crave ice cream occasionally. A scoop of Pistachio from Pidapipó can’t go wrong.Where do you go if you’re looking for inspiration?
Queen Victoria Market is a treasure trove of fresh produce. I love wandering through, picking up bits and pieces to cook at home. I love using fresh seafood and in-season produce to create dishes focussed on classic and traditional Italian flavour. What’s your comfort food?
ALT Pasta Bar, hidden in one of Melbourne’s laneways, mixes Italian flavours with Korean fusion. I love their spaghetti with sea urchin miso, tuna, wasabi leaf and chimichurri. It’s my go-to place when I’m in need of some comfort food with a twist.Where do you go for a big meal?
Butchers Diner on Bourke Street serves the best burgers in Melbourne! I always treat myself to their crispy bacon burger with a side of chips.Any recommendations for visitors?
When we have guests from out of town, my wife and I always go to Supernormal to celebrate. It’s consistent and holds beautiful memories for us. It’s the perfect place to showcase Melbourne’s vibrant dining scene to visitors. What’s your dream restaurant to visit?
Atoboy in NYE. They serve traditional Korean cuisine in a modern way, and I’m eager to try it myself. It’s definitely at the top of my list of restaurants to visit.
