MANGO HABANERO DRUNKEN PRAWNS
Prawns:
6 prawns
400 mL tequila
Sauce:
2 Mangoes
6 Green Habanero Chillies
10 grams of Coriander
20 mL of Lime juice
Pinch of Salt
1 tablespoon of Brown Sugar
20 grams of Mint
20 grams of diced Spanish Onion
1 teaspoon of turmeric powder
To Serve:
Indian Pappadums
Marinate the prawns in 400mL of tequila for 3 – 4 hours.
Blend all sauce ingredients and pour into a martini glass.
Layer Prawns around the glass and add pappadums.
