A First Look of Gowings’ New Era

Sydneysiders, welcome to the Gowings’ new era.

Let’s deep dive into the evolution of a Sydney institution, which has been inspired by New York’s Little Italy’s old cool and served straight-up.

We know, you know, city locale Gowings. QT Sydney’s signature restaurant and bar has found new-found inspiration in New York’s Little Italy and steakhouse scene as it reopens it’s doors today. Following the success of QT Auckland’s Esther, we’re collaborating on our creative culinary direction, with Sean Connolly. One of Australia’s most well respected and acclaimed chefs, Sean has found a home in QT, spending his time between Sydney and Auckland.

The first look reveals elegant and unpretentious Italo cuisine simultaneously. You’ll find our next story begins on the edge of nostalgia, as Gowings’ has evolved with the soul of places that have stood fast for a century. Sean introduces his own red sauce roots, elevated with white tablecloths and a scene is set for tableside bravado. Think Caesar salad, steak tartare, a roving cheese and martini trolley. 

Excited? Same. So, we asked for chef’s two cents on working on such an iconic venue.

“I’m very excited to be working with Gowings, a restaurant with so much history, located in a building with its roots in Australian culture. In this new venture, I will bring back old school hotel dining with a twist, combining the new interiors and menu with interactive theatre. While the food certainly an important aspect of a restaurant, the menu falls secondary to the experience and how it makes you feel – with elements like light, sound, music and fashion,” responded Sean.

Of course QT’s design team and long-time collaborator Nic Graham, has brought his talent to refresh this venue a decade later. Rediscover heritage highs; high-fashion art dripping from the ceilings to photography that transports you to a thrilling point in time. The restaurant will feel romantic, reborn and tactile, ripe for rockstars and a touch of theatrics. It is a unique experience, where you bring out-of-town guests to meet a full cross-section of downtown denizens and get a great meal, to boot.

With common threads of design-led wonder, each QT is a character in their own right. Gowings is no exception, so sharpen your knives, this old soul is on fire.
