Adriano Zumbo has dialled up the colour, the nostalgia and the flavour in ways we didn’t know possible. It’s high tea with QT personality, built to surprise, delight and keep the senses busy in all the best ways.

We asked Zumbo to break down the thinking behind this season’s newest creations.

How would you describe the new menu?
I’ve built a menu that’s fun, colourful and full of nostalgic flavours. I’ve taken familiar tastes and layered them with textures that pop, crack, melt and surprise. It’s designed to excite the senses and keep you guessing from the first bite to the last.

Where did you pull inspiration from?
Inspiration comes from everywhere around me. Nostalgia. Colour. Global food culture. Flavours I’m loving right now. Even the simple feeling that it’s time for a change. This menu is shaped by what I see, what I taste and what I want to play with.

What’s your favourite new menu item and why?
My favourite is the Spiced Chicken Potato Bomba. It’s warm, punchy and incredibly satisfying. I’m also loving the Matcha and Fairy Bread Zumbarons because they hit that sweet spot between childhood memory and modern flavour.

What makes your QTea different to a traditional high tea?
QTea is current, tasty and genuinely creative. Everything is made in house with real technique behind it. It’s modern nostalgia that respects tradition but doesn’t sit still. Sweet, savoury, colourful and clever, served with tea or bubbles. It’s high tea with personality.
