MAD SYD 2016

René Redzepi… what a dude. The culinary man. The genius chef behind what Restaurant Magazine crowned the world’s best restaurant in 2010, 2011, 2012 and 2014 – Noma, the Danish based super eatery that pumps next-level Nordic food. Early this year Mr Redzepi opened up the pop-up version of Noma in Sydney for a ten-week trot. Reportedly the entire group of reservations for this sold out in 90 seconds, such was the success of the demand for a taste of Redzepi’s inventions.

The last day of service for Noma Sydney will be April 2, though as René doesn’t like to sit still, the very next day he’ll join a string of astonishing chefs for the very first MAD SYD – a conversation hosted in the Opera House regarding food, flavours and the future of both.

The MAD organization was created by Chef Redzepi in 2011 to raise awareness around the idea of expanding the idea of healthy environments and creating better meals in restaurants and at home. From sustainable produce to environmentally friendly practices, the team at MAD have hosted a number of conversations in the northern hemisphere, with MAD SYD being the first one of its kind, far from its Nordic roots.

MAD SYD, simply translates from Danish to ‘Food South’, which is exactly what the day will be focusing on, exploring local produce that will be creating tomorrow’s meal. The speakers include distinguished chefs such as Momofuku’s David Chang, Sydney’s own Kylie Kwong and head chef from Italy’s Osteria Francescana, Massimo Bottura. Zimbabwean food activist, Chido Govra and social researcher Rebecca Huntley will also join Redzepi on stage to talk brave new ideas on how we can better the world through healthy choices, both for the body and the planet.
