And who better to quiz on all things nourishment than QT Sydney Executive Chef, Nic Wood?!
As the curator of tantalising treats, we asked Nic for his top in-room dining selections and how we can create our own in-room restaurant experience.
Nic, you’ve made some tweaks to the QT Sydney in-room dining menu. Talk us through them?
Staying indoors doesn’t mean missing out on exciting dining options! We wanted to keep guest favourite selections like our wellness bowls, while adding some signature dishes from Gowings Bar & Grill and Parlour Cucina. Guests are able to select Gowings Bar & Grill’s Pan Seared Snapper with tuscan white beans, smoked tomatoes and lemon, QT Rib Eye with mushrooms, cognac sauce and fries or Parlour Cucina’s classic Parmigiana with lemon crumbed chicken, buffalo mozzarella and tomato.
Whether guests are staying with us overnight or retreating as part of a long stay, we’re bringing our bustling dining room to a designer room.

Yum! The Seared Snapper was one of our favourite from the Gowings Bar & Grill menu. How can we create a restaurant feel from our rooms?
It’s simple – let us do it for you! Our in-room dining is prepared by the same passionate team behind Gowings Bar & Grill and Parlour Cucina, just delivered to your door. There’s also a great wine list to match. There is something insanely satisfying in being perched on a QT Dream Bed with a chef prepared meal, beautiful bottle of Chardonnay and endless free movies at your fingertips.
Sign us up! Could you also share the additional cleanliness measures QT as undertaken?
Of course. Additional preventative measures have been put in place, including reinforcing our strict cleaning protocols, providing staff with protective equipment and contactless check in, in-room dining drop off and check out.
If you were retreating at QT Sydney, what are your chef’s selections from the in-room dining menu along with drinks to match?
Breakfast: I can’t go past the Roman Breakfast Plate. It was one the most ordered dishes from Parlour Cucina. Anything with haloumi is always a breakfast winner for me and this is light and satisfying.
Lunch: The Not So Classic Club. You cannot go to a hotel without ordering a club sandwich. Now, I don’t want to brag, but ours really is the best! Grilled chicken, boiled egg, streaky bacon, iceberg lettuce, tomato, provolone, aioli and potato crisps – I get excited about it every time I stay.

Dinner: The QT Rib Eye with a side of Broccolini with parmesan and lemon. We source the best cuts of meat in the Country and the QT Rib Eye was one of my favourite dishes to prepare in the Gowings kitchen. And when it comes to wine, Western Australian winemakers still have a special place in my heart, I’ll be ordering a bottle of Picardy Chardonnay from Pemberton.
Dessert: Ice Cream Sunade with lemon mascarpone ice cream, chocolate fudge sauce,
caramelised banana and macadamia nut brittle. I put this on the menu to make people smile. Who doesn’t love an Ice Cream Sunade?Book your next retreat at QT Sydney here.
