Recipe: Healthy Banana Pancakes

If you’ve got a sweet tooth like us, then you’ll be ecstatic to know we’ve dug up our most delicious recipe for GUILT-FREE pancakes. Yup, all that warm, fluffy goodness without the remorse. It’s low in calories, gluten free, free of simple sugars and even free of flour! So why does it taste so good?! It’s thanks to over-ripe bananas we can still get a naturally sweet flavour that is simply to-die-for!

Don’t believe us? Try it for yourself.

Ingredients:

  • 1 ½ large over-ripe bananas
  • 2 eggs
  • 1/8 tsp of baking powder (or a tbsp of whole-grain flour if you haven’t got any!)

Method:

  1. Using a potato-masher or a fork, lightly mash up the nana’s in a bowl
  2. In another bowl, crack the two eggs and lightly whisk
  3. Add the egg mixture and baking powder into the mashed up bananas and stir with a fork to combine
  4. Pour mixture about the size of the palm of your hand into a medium heat saucepan (we use coconut oil instead of butter on the pan for even less naughty) and cook on medium heat until lightly browned on each side.
  5. Serve up with fresh berries and a little bit of maple syrup if you can afford to – we just couldn’t say no!
