RECIPE: Chia Pods

These fiddly little super-seeds mixed with fresh young coconut milk & sweetened with maple syrup & vanilla make for a cracking, pudding-like start to the day. You could always buy the pods pre-made but there’s nothing quite like fresh & made-by-hand!

Ingredients:

  • 3 T chia seeds
  • 3 very finely chopped Medjool dates for sweetness
  • Seeds of 1/2 vanilla pod
  • 200ml coconut milk

Method:

  1. Whisk all ingredients together, cover & refrigerate overnight.
  2. In the morning give the pudding a good stir & serve with fresh fruit.
