A Peek at Santini Bar & Grill

QT Perth is coming super soon and we are feeling ready and raring to eat!

Here’s a little introduction to the signature restaurant that will be called Santini Bar & Grill. We had a chat with the renowned Robert Marchetti, the Creative Food Director that has been doing a fantastic job preparing Santini to be truly fabulous.

A little bit about Robert Marchetti

His family hails from the seaside town of San Benedetto del Tronto in Italy and he grew up with food on his mind.

He proclaims that with thinking about Santini opening in the seaside city of Perth he immediately thought of the idea of “food of the sun”. Marchetti set out to offer the “kind of food that makes you feel good, makes you still fit in your bikini but also, the produce is gleaming with freshness. You’re in Capri or Santorini and you’re sitting there looking at the blue water and thinking this is the kind of food that I want to be eating for the rest of my life. Why don’t I ever cook this at home…?”.

A little bit about Santini Bar & Grill

The restaurant will have a wood-fired grill and oven that will allow some great wood aspects to be instilled into the food and the taste will be distinctly Italian influenced as Marchetti is keen to stay true to his roots and explore his heritage through cuisine.

Santini Bar & Grill will be focusing on fantastic seasonal produce, restraint in flavour and cooking in a positive way with an overall essence of freshness.

The restaurant will be using the best of the best when it comes to produce; from seafood like razor clams and whole sardines to vegetables like artichokes, plus luscious lamb and fresh burrata. Highlighting the current seasonal ingredients, the menu will constantly be changing to reflect the market.

Marchetti is thinking of signature dishes such as Bistecca alla Fiorentina to celebrate the amazing meat that Australia has to offer, plus a hero calamari dish and a handmade pasta with Vongole (as an example of what you can expect). He’s also keen to experiment with non-traditional ingredients such as eel, stingray, leather jacket and skate to show that these ingredients can be absolutely delicious.

Robert Marchetti explains Santini Bar & Grill as “gleaming food of the sun, feel-good, restrained Italian produce seen in its best possible light.” That sounds pretty bloody fantastic to us so there’s obviously some fab things to expect from the newest quintessentially QT restaurant.
