In a world where health, mindfulness, and social connection are taking centre stage, the rise of non-alcoholic and low-alcohol drinks is rewriting the rules of how we celebrate and unwind. Â
No longer relegated to soda or sparkling water, today’s non-alc and low-alc options are crafted with the same artistry and innovation as their boozy counterparts bursting with complex flavours, and sophisticated presentation. Â
Whether embracing moderation, exploring mindful drinking, or simply savouring a well-crafted cocktail without the hangover, this movement is redefining what it means to raise a glass. And with summer in full swing on the Rooftop at QT, we’re diving headfirst into the trend with Salt & Sky: Margarita Summer, featuring Lyre’s non-alc and low-alc margaritas that deliver all the flavour and none of the FOMO.Â
Hi Marc, we are so excited to feature Lyre’s on our Salt & Sky menu! The brand has made such an impact in the world of non-alcoholic spirits. What core values drive Lyre’s, and how do they shape the way you develop and promote your products?Â
Lyre’s was created to give people sophisticated, better-for-you options for moderating their alcohol consumption. We believe no one should have to compromise on taste or quality when it comes to enjoying a drink, they should be able to enjoy the flavours they know and love regardless of alcohol content. By creating non-alcoholic alternatives to traditional spirits and cocktails that are all-natural and lower in sugar and calories, we’re giving people delicious options they can enjoy guilt-free, any time of day.Â
What are some of the challenges in developing non-alcoholic spirits that still deliver the depth and flavour of their alcoholic counterparts?Â
We develop our non-alcoholic spirits with the end serve in mind. For example, with Lyre’s Agave Blanco, we had to make sure it stood up in classic tequila-based cocktails like Margaritas and Palomas. We work with all-natural flavours and extracts from around the globe, which gives us endless possibilities, but it also means we need to be very deliberate in selecting the perfect mix to create a product that’s well-rounded and cocktail-ready.Â
One of the trickiest parts is mimicking the ethanol burn you get from high-proof spirits. We’ve tackled that by using clever ingredients like capsaicin, peppercorns, and even mint extracts to replicate a similar drinking experience—without overwhelming the palate.Â
The demand for non-alcohol and low-alcohol options has grown so quickly in recent years. Where do you see this trend heading in the next five years?Â
Globally, we’re seeing alcohol consumption trend downward, with more people leaning into healthier, more mindful lifestyles. Taste and quality are becoming the main drivers for what consumers choose, and alcohol alternatives that fit seamlessly into their routines are in demand.Â
Over the next five years, I think we’ll see even more brands entering the non-alc and low-alc space, with innovation across the board. As venues and retailers continue to expand their offerings, more people will discover these options and become regulars in the category. It’s exciting to watch it grow!Â
How does Lyre’s embrace sustainability and innovation in its product development and branding?Â
Lyre’s packaging is 100% recyclable and we are innovating in lighter packaging to further reduce our carbon footprint. As we have expanded and grown within more markets globally, we have begun to localise production across North America and Europe to further reduce carbon emissions from shipping and transport.Â
What would you say to someone who’s sceptical about non-alcohol or low-alcohol options? How can they explore these offerings without feeling like they’re missing out?Â
The category has evolved from traditional non-alcoholic options such as mocktails, which are generally targeted at a younger audience. Non-alcoholic spirits such as Lyre’s has allowed for the development of sophisticated non-alcoholic cocktail options designed for more mature palates. Sceptics are often pleasantly surprised by how true-to-taste a Lyre’s non-alcoholic cocktail is to their favourite classic.  Â
I’d encourage anyone to start with a non-alc version of a cocktail they already love—whether that’s a Spritz, an Espresso Martini, or a Margarita. Chances are, they’ll be pleasantly surprised by how satisfying it is!Â
Why do you think margaritas are a great choice for showcasing no-alcohol and low-alcohol creations?Â
The Margarita is the world’s most popular cocktail right now, and for good reason. It’s got this perfect balance of citrus, sweetness, and smokiness that’s tailor-made for summer. With Lyre’s Agave Blanco, we’ve captured the depth of flavour that makes Margaritas so iconic. It’s the perfect way to showcase how well no- and low-alcohol options can deliver a full, satisfying cocktail experience.Â
As the demand for mindful drinking grows, non-alcoholic and low-alcohol options are proving that it’s possible to indulge in all the flavour and sophistication without the hangover. So, next time you’re raising a glass, skip the FOMO and reach for a non-alc or low-alc creation that’s as bold and flavourful as you are. Â
