In the kitchen, Capitol’s very own Executive Chef Josh Smith-Thirkell brings the heat with shared tables, a four-course menu shaped by smoke and flame. Bluefin tuna gilda to start, pillowy buffalo ricotta ravioli to follow, and Junee lamb sous vide, then finished over fire. Â
