Gowings Bar & Grill serves, shakes, stirs new-age classics

Always with a bit of abra, and lot of cadbra, QT Sydney’s Gowings Bar & Grill showcases a menu glow-up, full of fresh changes suited for the warmer seasons.

Gowings Bar & Grill has been sharpening their tools to do what they do best; produce-forward dishes, silver service, house made libations, creating a place for fun and frivolity, an escape to a New York-inspired city destination.

Be met with a familiar charm, let’s call it nostalgia. Nostalgia for bold brassiere dining, with big kitchen energy, and at the helm is Culinary Director Adam Petta and Head Chef Harry Tagg.

Feasting fine in Gowings Grill is best started raw; Kingfish Ceviche brightened up with Nectarine, Jalapeno and Chives to the Classic Beef Tartare with Gaufrette Potato perfection. For those who want to start with a bit of heat, say hello to Grilled Skull Island Prawns soaked in Prawn Butter, balanced with bright Cherry Tomatoes.

Loved by carnivores, crowd-favourite mains include New York Striploin, Scotch Fillet and “I Only Have A Minute” Steak. Seafood shines with dishes such as Crispy Skin Wild Barramundi and Hiramasa Kingfish on a bed of Sautéed Cabbage, swimming in a low and slow Smoked Fish Broth.

The Gowings Signature Cheesecake is dessert dynasty; however, the new additions will leave satisfied palettes with an impossible decision – Madagascan Vanilla Crème BrĂ»lĂ©e or Valrhona Chocolate Mousse. The latter is delivered a touch of theatre, served tableside with a generous sprinkle of Honeycomb Crumb and lashings of Rum Custard.

Find comfort in a place where shaken or stirred, a new smile with a friendly embrace is your simple pleasure.

Providing a contemporary, and quintessentially QT experience, Gowings Bar introduces a suite of new house specials. Led by Head Bartender, Kwame Sinclair (formerly of The Cat’s Meow and Palmer & Co), guests will cheers to an element of unexpected with every sip.

Making the familiar, a little less familiar. The spirited twists on classics include the Banana Old Fashioned; Banana infused Makers Mark, Macadamia Liqueur and Maple finished with a chocolate waffle. And for a twist on the holy trinity of cocktails, the Chocolate Negroni starts with a chocolate ice sphere and is finished with freeze-dried chocolate orange.

A twist on the lips, but also a bar of tricks, there’s the Chandelier. It’s tossed with liquid nitrogen to create texture, dilute and chill, for a refreshing impression of a martini, made with Espolon Tequila, Cocchi Americano, Grand Marnier and a touch of Luxardo Maraschino. The Gentlemen’s Agreement is all about heat, as this version of a Penicillin is shaken with Ginger Infused Black Label, Poire Williams, Laphroaig, Honey, and finished with flame-throwing a cinnamon quill.

QT Sydney’s signature restaurant and bar has been invigorated from the first cocktail to the last libation. Gowings Bar & Grill’s new sips, bar tricks and dishes of fine-dining drama, caters to those with good taste, welcoming guests back to the finer things in life.

Bookings taken for dinner Wednesday to Saturday, lunch Thursday and Friday with the bar always open late.
