MIGUEL MAESTRE TO HOST EXCLUSIVE DINNER AT GOWINGS BAR & GRILL

On Friday June 23, the much-loved TV chef Miguel Maestre will take over QT Sydney’s Gowings Bar & Grill to present an exclusive three-course feast with matched wines in conjunction with this year’s Good Food & Wine Show, launching that day at the International Convention Centre, Darling Harbour.

With only 35 seats for the taking, Miguel will be on the Gowing’s pass for the exciting event to unveil a specially designed menu that will showcase his clean, fresh cooking style, which will be executed by the acclaimed Gowings kitchen team.

Miguel’s menu is an ode to his family history and esteemed career as a professional chef, showcasing technique learned alongside the great chefs of the world, including Ferran Adria and of course, his beloved Grand Mother. “Love is the best ingredient”, said Miguel who brings you a personal experience inspired by the pristine produce of Australia, with his signature elements of surprise and intrigue.

Kicking off the evening guests will enjoy four Spanish inspired canapés, including green olive ‘esferas’ & rosemary blossom, Gallega style bbq octopus with paprika & Jamón patatas, cucuruchos with quail egg & winter truffles and Sydney Rock oysters, sauce diablo & chorizo.

For entrée, Peruvian Winter Kingfish ceviche with beetroot, sweet potato pearls, scampi roe & finger lime, followed by Miguel`s family recipe from Murcia, Spain; ‘Paella a la Maestre 2017’, with southern rock lobster, duck neck chorizo, saffron braised mussels, crisp rice & black garlic aioli.

The finale of the culinary journey – ‘Texturas de Fresa’, or, Textures of strawberry, rhubarb & nasturtium.
