From the crackle of robata to pours from one of Melbourne’s largest rare whisky collections, Yamagen celebrates craftsmanship, connection and curiosity. Designed for sharing and interaction, the menu invites guests into flavour, form and theatre, whether seated at the central bar, close enough to watch the knife work, or tucked away for something more intimate.

The Menu

Blending classic Japanese technique with premium Victorian produce, expect umami depth and buttery richness with a fresh lift. From sashimi snapper with truffled tosazu and yuzu sesame, to the Yamagen uramaki roll with seared salmon and scallop – every dish is a dynamic conversation between Japan and Melbourne.

The beverage offering rivals the kitchen with dedicated sommeliers tending to an extensive wine list that champions Victoria’s regions, alongside a considered sake offering of over 45 varieties. Signature handcrafted cocktails with Japanese ingredients, including matcha, yuzu and umeshu, are served with dramatic delivery to delight the eyes and the tastebuds. Whisky aficionados can find more than 120 labels, ranging from approachable pours to rare Japanese releases and once-in-a-generation bottlings such as Hakushu 1981 Kioke Shikomi Single Malt and Yamazaki 25-Year-Old.

The Team

A highly accomplished team brings Yamagen’s vision to life. Classically trained Japanese Head Chef Yosuke Hatnaka brings decades of experience balancing technical precision with performance to work alongside Sous Chef Misaki Maniwa’s contemporary finesse. Together delivering a finely tuned service and elevated kitchen performance.

Complimented by Andrew Lam whose expertise in wine and beverage curation has been honed across renowned international establishments.

Experience

Guests are welcomed through Melbourne’s energetic Portland Lane (right next to QT Melbourne). The venue, designed by Luchetti Krelle in collaboration with EVT, is a haven of texture combined with dramatic lighting and eastern influence to evoke a warm ambience.

At the heart of Yamagen, chefs command the central bar designed as a live view of craft. Every detail counts even down to the Knives from Tanto drawing on the 10th generation lineage of Japanese sword makers.

By day, Tanto is a Japanese specialist knife and sharpening house, frequented by Melbourne’s best cuisine talent. By night, the space transforms into the most intimate private dining experience: a 12-seat room where blade craft meets robata heat, extending Yamagen’s philosophy of precision, performance and Japanese craft reimagined.
